Dessert for breakfast! It tastes like pumpkin pie filling, but it’s healthy. The original recipe calls for an 8×8 baking dish. I cut the ingredients in half, so I use a smaller dish, maybe a 6×6. You may need to adjust the baking time depending on the baking dish you choose.
Pumpkin Pie Clafoutis
Adapted from Nourished and Nurtured
4 T butter, melted and slightly cooled
3/4 c pumpkin puree
2-3 T honey or maple syrup
1/4 c yogurt
1/4 c chopped nuts
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp salt
pinch ground nutmeg
pinch ground cloves
1) Preheat oven to 325 degrees.
2) In a large bowl, whisk together all ingredients.
3) Pour into greased baking dish.
4) Bake for 50 – 60 minutes, or until the center appears set.
