This was an insanely tasty but quick dinner. The buffalo sauce had just the right tang without being overwhelmingly spicy. The celery and lettuce added a nice crunch. You could also wrap these up in a tortilla for something a little different.
Buffalo Chicken Lettuce Wraps
2 boneless, skinless chicken breasts (or equivalent in chicken thighs)
1/4 c butter, melted
2 T hot sauce
1 T apple cider vinegar
1/2 package ranch dressing mix
2 ribs celery, diced
monterrey jack cheese, shredded
6-7 large romaine leaves
1) Grill chicken until done; shred and place in a bowl.
2) In a glass measuring cup, whisk together butter, hot sauce, vinegar and ranch dressing mix.
3) Pour about 2/3 of the hot sauce mixture over the chicken; stir.
4) Assemble wraps by placing the desired amounts of chicken, celery and cheese in the center of a lettuce leaf; drizzle with remaining hot sauce mixture.
